Super Moist, Healthy muffins. When I ate these I felt there is nothing more tastier than this. Made with readily available ingredients... this super tasty muffin is a treat for vegetarians.
An absolute kids favorite. Make these easy muffins..pack these lunch boxes.... make them happy.
1 heaped cup of Wheat Flour
1 cup Yogurt (I used Greek Yogurt)
1 cup Grated Carrot
3/4 cup Sugar
1/4 cup Vegetable Oil
1/2 teaspoon Baking Soda
1 teaspoon Baking Powder
1/2 teaspoon Vanilla Essence
pinch of Salt
- Pre heat Oven at 180 degrees. Grate carrot. In a bowl, beat yogurt and sugar. Then add baking powder, baking soda, vanilla essence and salt.
- Add grated to the bowl and gently mix it. Now add wheat flour and mix it. Don't overmix. You can see small bubbles now.
- Line cupcake baking pan with liners. Fill 2/3 of each cup . Let it bake for 15- 20 minutes or till the tooth pick inserted in the center comes out clean.
- For a crunchy muffin, add Some carrot or oats on top just before removing the tray from oven.
