Stir Fries are easy to make so I often make them at home. This dark pink, flavourful, delicious curry is always a big hit at my home. Beetroot curry is a nutritious curry too. My kids like it without coconut. So for them I make Beetroot Poriyal without coconut !!!
Rice, Sambar / Rasam and any Stir Fries is a great South Indian lunch combo.

Stir Fry Recipes : Tindora (Dondakaya) Stir Fry, Okra (Bendakaya ) Stir Fry
1 1/2 teaspoon Oil
1/2 teaspoon Mustard
1/2 teaspoon Cumin seeds
1 tablespoon White split lentils / Urad dal
2 Green chillies
10 Curry leaves
2 teaspoon Cumin powder
- Finely chop / grate beetroot. Slice green chillies. Heat a pan. Add Oil, mustard seeds, cumin seeds, white split lentils, fry till urad dal turns golden brown. Add green chillies and curry leaves. fry for just 10 seconds.
- Add chopped beetroot to pan. Stir fry for 2-3 mins. Sprinkle some water, cover it and let it cook till beetroot becomes soft. (If curry becomes dry while cooking sprinkle water again.) Add salt, cumin powder, coconut, give a stir, cook for 5 mins.
