Beetroot Curry / Beetroot Stir Fry / Beetroot Poriyal



 Stir Fries are easy to make so I often make them at home. This dark pink, flavourful, delicious curry is always a big hit at my home. Beetroot curry is a nutritious curry too. My kids like it without coconut. So for them I make Beetroot Poriyal without coconut !!!

Rice, Sambar / Rasam and any Stir Fries is a great South Indian lunch combo.

2 Beetroot
1 1/2 teaspoon Oil
1/2 teaspoon Mustard
1/2 teaspoon Cumin seeds
1 tablespoon White split lentils / Urad dal
2 Green chillies
10 Curry leaves
2 teaspoon Cumin powder
2 tablespoon grated Coconut

  1. Finely chop / grate beetroot. Slice green chillies. Heat a pan. Add Oil, mustard seeds, cumin seeds, white split lentils, fry till urad dal turns golden brown. Add green chillies and curry leaves. fry for just 10 seconds.
  2. Add chopped beetroot to pan. Stir fry for 2-3 mins. Sprinkle some water, cover it and let it cook till beetroot becomes soft. (If curry becomes dry while cooking sprinkle water again.) Add salt, cumin powder, coconut, give a stir, cook for 5 mins.
  3. Have it with Rice or Rotis.
