Thin Murukku / Andhra Karappoosa

 
 
 My Mom always used to make Karappoosa / Andhra Savoury Sev during our childhood days. Even now she makes it when I go to my Mom's place. She is an expert in this.
 My kids also like it a lot, so I too frequently make these crunchy, timespass Karappoosa . It is a easy to make snack.
 

 

Ingredients (Makes 15-18)

2 Cups Chickpea Flour / Besan Flour
1 Cup Rice Flour
3/4 teaspoon Salt
3/4 teaspoon Red Chilli Powder
3/4 teaspoon Hing
3/4 - 1 Cup Water
Oil for deep-fry
  1. In a large bowl, mix Besan, Rice Flour, Salt, Red Chilli Powder, Hing and water. Don't add water at a time. Add it little by little. Make a tight dough.
  2. Heat Oil for deep fry.  When the oil is hot, place a small ant size portion of the dough in oil, it should raise immediately to the top. Then take 4 teaspoons of hot Oil and add it to dough in the bowl . Mix well.
  3. Take a Murukku Press and place the small hole circle, and then a big lemon sized dough in it.
  4. If you are getting long threads of dough out of the murukku press then it is fine. Otherwise little water to the dough and try again. Place the murukku press above hot oil and press it to make a big outer circle and then fill the inside. A big lemon sized dough can make 2-3 murukkus.
  5. Cook it for 2 minutes on each side. Strain it on an absorbent paper. When it is cool, save it in a container.
