Ingredients
7-8 Brinjal
2 Onion
4 tsp Benagal Gram / Channa Dal
1 tsp Black Gram / Urad Dal
4 tsp Peanuts
2 Red Chillies
1 tsp Ginger Paste
1/4 Cup Tamarind Pulp (Lemon Sized Tamarind)
1 tsp Cumin Powder
1 tsp Red Chilli Powder
1 tsp Sugar
7 tsp Oil
1 1/2 tsp Salt
Water
- Cut Brinjal lengthwise into 4 parts but only 3/4 length and keep them in water for 10 mins. Heat a pan 2 tsp Oil and place Brinjal in Oil. Saute them till the skin turns brown and the inside portion soft.
- Take out Brinjal from pan and let it cool. Now in the same pan, fry Channa Dal, Urad Dal, Jeera, Mustard, Peanuts till light brown add Red Chillies, Ginger Paste, Cumin Powder and fry for a min.
- Add cut Onion and fry till light brown. Allow this cool.
- Grind Onion along with the Dals to a coarse paste. Stuffing is ready. Keep the Stuffing in Brinjal. Heat a pan with 3 tsp Oil and place the stuffed Brinjal in Oil.
- Add remining stuffing, Tamarind Pulp and pour water to immerse Brinjal. Let it cook for 15 mins. Add Red Chilli Powder, Salt, Sugar and 2 more tsp of Oil. Curry will ready in another 5 mins.
