'Cake with Coffee Powder' ..cannot call this as 'Coffee Cake' because coffee cakes are the cakes which are eaten with coffee. I read in a book that adding coffee powder to cake intensifies the chocolate flavour. Tried that... it really came out good. This time I increased the quantity of cofee powder just a teaspoon and made a coffee chocolate flavoured cake...This one is specially for coffee lovers.
Dry Ingredients
2 cups All Purpose Flour
1 teaspoon Baking Power
1 teaspoon Baking Soda
1 teaspoon Salt
1 cup Sugar
Wet Ingredients
2 teaspoon Cocoa Powder
3/4 cup Yogurt
3/4 cup Vegetable Oil
1 cup Water
2 teaspoons Vanilla Essence
2 teaspoons Red Food Colour (Optional)
1 teaspoon Instant Coffee Powder
- Pre heat Oven at 180 degrees. Mix all dry ingredients in a bowl. In a blender/ Processor, process Yogurt, Cocoa Powder, Vegetable Oil, Vanilla Essence. Add Instant coffee powder to water in a cup.Keep it microwave oven for 2-3 minutes. Add this to processor and process again for a minute.
- Add the wet ingredients to dry ingredients bowl and whisk all these together to a fluffy, smooth paste. Add red food colour at this stage.
- Grease the pan with a tablespoon of butter. Pour the cake mix in it and keep it in oven. Bake it for 25- 30 minutes. Run a toothpick till the end of the cake to check the cake. If the toothpick comes out clean, the cake is done.Take it out of the oven. and place it on a cooling tray.
- When it is cool, you can decorate it with your favourite frosting. I made icing sugar frosting and we liked it.
