Happy Vinayaka Chaviti / Ganesh Chaturthi to all - 9th September 2013.
This Sweet temptation is normally made during festive seasons but can be made anytime because it is easy to make. I am sure nothing will be left for you to eat.
Coconut Laddoo is made in different ways. This is the roasted version with Jaggery added to it instead of Sugar. My kids call it Brown Coconut Laddoo.
This is also the stuffing for Jilledukayalu/ Modak (Steamed Rice Dumplings) that we offer to Lord Ganesha on Ganesh Chathurthi. I Will make these only for Vinayaka Chavithi. Will post that recipe later.
Ingredients
1 Cup Coconut Pieces
1 1/4 Cup Jaggery
3 tablespoon Water
- Grind Coconut pieces in Mixie / Processor (Use Pulse option) for 2-3 minutes till it becomes coarse powder.You can use Dessicated Coconut Powder too.
- Heat a heavy bottomed pan, add Coconut Powder to it and dry roast till it turns to light brown colour. Don't let it burn at the bottom. Mix it well every 2 minutes. Then add Jaggery and Water, wait until Jaggery completely melts. Stir it every 2 miuntes. After this, stir continuously till the whole mixture comes close and starts leaving the walls of the pan. Remove it onto a flat plate, allow it cool and make round balls (laddoos).
