Eggless Chocolate Cake with Gems

 

Chocolate, Cake and Gems...all kids favorites!!!! 

When my daughter asked me to make a cake which she wants to sell as a part of fund raising event for a charity, I took the recipe from a blog, made some changes to make it eggless. It came out awesome. Kids and teachers at her school loved it and took pictures  :) and this delicious cake is sold for double the normal price :) wow...   

You can make any cake and can decorate with Gems. 


Ingredients 

3 cups Cake Flour 
2 1/2 cups Sugar
6 tablespoons Cocoa Powder
1/2 cup Oil
2 1/4 Cups Cold Milk
2 teaspoon Baking Soda
2 teaspoon Vanilla Extract
2 tablespoons Lemon Juice 
2 pinches of Salt

For decoration
Gems
Chocolate Frosting 
  1. Pre heat oven at 180 degrees. In a big bowl, add all dry ingredients - Cake flour, sugar, cocoa powder, baking soda and salt. Mix it well.In another bowl, add all wet ingredients - Milk, Oil, Lemon juice and vanilla extract.
  2. Whisk this well. Make a well in the dry ingredients bowl, pour wet ingredients in that. Fold it from all sides. Whisk it well for 10 mins.   Grease a baking pan with butter / Ghee . Pour cake batter in that and level it.
  3. Bake it for 35- 40 mins.( or until the tooth pick immersed in it till bottom comes out clean.). Allow it cool. Cut it horizontally. Spread a thick layer of Chocolate Frosting all around it and then decorate it with Gems.    
  4. Make it for any occasion. Enjoy :)
