Vegetable Pulav

 
 
Want to have something very delicious but don't have much time to cook? This is one option.
 This is ready in just about half an hour so perfect for lunch boxes.  Just one Rice Item with Raita makes a good weekend lunch.
 

Ingredients

1 Big Potato
1 Big Onion
1 Carrot
1 Floret Cauliflower
1/2 cup green peas Boiled / Frozen
2 Tomatoes
1 1/2 cup Basmati Rice
3 1/2 cups Water
4 teaspoon Oil
1 teaspoon Salt
1 teaspoon Red Chilli Powder
1 teaspoon Coriander Powder
1 teaspoon Masala Powder
1 teaspoon ginger- garlic paste
1/4 teaspoon Turmeric Powder
2-3 cinnamon
3-4 Bay Leaf
2-3 Cloves
1/2 teaspoon Coriander Seeds
 
 
  1. Cut Potato, Onion, Carrot , Tomato to 1/2 inch pieces. Seperate Cauliflower to small florets. 
  2. Wash Rice add a teaspoon of Oil and keep aside atleast for 10 mins.  Heat a pan, add 3 teaspoons of Oil, Cinnamon, Bay Leaf, Cloves and Corinader seeds.
  3. When Coriander Seeds turn dark brown, add Onion and saute for 5 mins. Add green peas saute for 3 mins. Now add Salt, Red Chilli Powder, Coriander Powder, Masala, Turmeric Powder, Ginger - garlic paste and mix well.
  4. After 5 mins Add all the vegetables except tomatoes. Mix well. Cover it with a lid . After 5 mins open the lid add tomatoes, mix well  and saute for 5 mins. Now add water and cover it.
  5. Pulav will be ready in 15- 20 mins. Keep in a spoon inside to check if rice is cooked properly. If you see some water, cook for 5 more mins.
  6.  Have it when it is hot with Raita.
