Watermelon Granita - Summer Recipes



In shiny, bright, hot summer if you feel like having something chilled !!!!
Try this easiest frozen dessert. Hmmm...... have to wait for atleast 2 hours to have this.
You can also make Indian Ice Golas (Crushed Ice on Stick ) with this !!! Have you ever tasted Watermelon Ice Gola ?????  You can make it at home now!!!! 


Ingredients

6 cups of roughly chopped Watermelon pieces
1/2 cup Sugar
  1. Remove the skin and seeds of Watermelon. Roughly chop watermelon. In a blender, blend watermelon pieces with sugar.
  2. Strain the watermelon juice into a wide freezer proof container. Place the container in freezer to chill. 
  3. Every 30 minutes take the container out, scrap the mixture with a spoon or fork to break the ice crystals. Keep it back in freezer. Scrap this mixture every 30 minutes for 2 hours.
  4.  Light, fluffy, chilled watermelon granita will be ready in just 2 hours.

Mango Juice - Summer Recipes



Summer is the time when you can enjoy the king of fruits "Mango". Here is the easiest and simplest of all the recipes you can make with a mango - Mango Juice. 

When you can Mango juice so easily at home why to buy bottled juice. Bottled mango juice has a different type of taste with all the preservatives added to it. Make this at home and beat the heat.



Ingredients 

2 Ripe Mangoes
1 cup Water
2 tablespoons Sugar
Few Ice Cubes

  1. Cut Mangoes and scoop out the pulp into a juicer. Add water, sugar and ice cubes. Process it for 2-3 minutes. That's it. Mango juice is ready. Pour into glasses.
  2. Who can say no to this !!!!!

Indian Tea Masala Powder / Chai Masala Powder



Indian Chai or Tea is a everyday beverage for most of the Indians. Everyday we start our day with Tea made with ginger, Cardamom and Cloves. Sometimes to make tea more spicy we add Cinnamon and pepper. 

It is always good to make our own version of tea masala powder and keep it handy. Add a pinch of it while boiling tea. There is no rule to make tea masala, we can add more or less of any of of the spices according to our taste.  You can also add more spices or other ingredients like lemon grass, nutmeg or herbs if you want.

Here is my version of the tea masala powder.


Ingredients

30 Cardamom / Elaichi
A small piece of Dry ginger / 1 teaspoon Dry Ginger Powder
1 teaspoon Black Pepper 
20 Cloves
2 small sticks Cinnamom 
1/2 teaspoon Fennel Seeds

Directions  
  1. Collect al the ingredients you want to add to tea masala powder. It is always better to dry them in Sun for 1/2 an hour or place them on a hot tava/ pan for a min. To do this , heat a pan for 2 minutes. Switch off the stove and place the ingredients on it for a min. Now grind them to a fine powder.
  2. While boiling tea, add a pinch of it for 2 cups of tea. Enjoy your version of masala tea.

Orange Juice Recipe - How to make Fresh Orange Juice





There is nothing which refreshes you as much as fresh juices. Fresh Orange juice is more satisfying and rich of vitamins and minerals. It is a bit of time taking but tastes much better than the concentrated ones or the store bought juices.

There are somany  benefits of drinking fresh orange juice 1. Orange has some natural sugars the reduces stress. 2. It is essential for blood sugar regulation 3. Rich of minerals , vitamins and magnesium 4. It is useful for anti - aging . WOW so many benefits. So drink it everyday.

There is no hard and fast rule to make Orange juice. We can make it according to our taste.




3 Oranges
1 /4 cup Water (optional)
1 teaspoon Sugar / Honey (optional)

  1. Cut Oranges into halves. Squeeze them. Take the juice into a glass. Add pulp. If you like with pulp and without sugar you can have it like this.
  2. Or after squeezing Orange, strain that into a bowl, add sugar or honey , add water mix it well until it dilutes and then have it.
  3. Easy and healthy Orange juice with in minutes.

Pineapple Juice




As the temperatures are rising and need for juices is increasing, I started making fresh juices again at home. Fresh juices after a very hectic , hot day brings back our energy levels and these are so easy to make. Pineapple juice is a rich of nutrients among all the fruits. It provides many health benefits too. Cutting pineapple is the only tedious thing.


(Makes 4 Glasses)

One Big Pineapple
5-6  teaspoons Sugar
3-4  cups Water


  1. Cut the leaf top of the pineapple. Remove or remove the skin with a sharp knife. Cut the pineapple into small pieces discarding the core. Put these pieces in a blender / juicer. Add 3 teaspoons of sugar and 2 cups of water.
  2. Blend this for 5 mins. Strain this and discard the pulp. Pineapple juice is now ready. You can have it now or can dilute it more by adding 1-2 cups of water and 2-3 teaspoon. Mix it well and serve.
  3. Pineapple juice on a hot summer day is very refreshing.

Carrot Orange Juice



Carrot Juice is one of the best vegetable juices it is rich with vitamin A and C. Adding a small quantity of Orange juice makes it more tastier.

I am a big fan of Carrot and fresh juices. Having Carrot juice is always there in my to do list when I visit vizag. But here in SA I make it at home. Don't throw the carrot pulp which you get while making this juice . You can make Carrot Halwa  / Gajar ka Halwa with that in a much easier way.

 Check my Carrot Halwa recipe. I have used milk in that. But I will soon the easy recipe of Carrot Halwa recipe without milk this is much easier method.

 Drink this juice for good health, eyes and skin.



6-8 Carrots
2 Oranges
1/4 cup of Sugar (Optional)


  1. Cut the tops and peel the skin. Cut Carrot to small pieces. In a blender or processor add a cup of water blend it until finely mashed to a puree. Add 3 cups of water, mix it and let it sit for a while. Strain it into a bowl.
  2. Remove the skin of orange squeeze it or place the flesh in the processor and juice it. Strain it and mix with carrot juice. 
  3. Let it sit again for a while or strain the whole juice again. Pour this into a serving jar and add water. We can make 1 1/2 litres (or 4 glasses) of juice.  Taste it. Add Sugar if needed.
  4. Remember don't throw the carrot pulp. You can make carrot halwa with that. Will post that recipe soon.
